Destemmed / 50% berries crushed (obviously 50% whole). Fermented in concrete, maceration 22 days. 8 months in 700l neutral oak.
Tasting Notes
Medium weight: red cherry and tart raspberry with white pepper, dried herbs and lemon myrtle, and a little game. Ultrafine, graphite-like tannins and a light, succulent texture. Drink now to 2035.
