Vineyard
The vines are worked as naturally as possible, without chemical or synthetic products. Pure soil gives grapes that have flavour!
Winemaking
Hand harvested, only in small crates to prevent oxidation. The bunches are then sorted by hand. Destemming and light crushing at 8°C to avoid extracting colour. The free-run juice and press juice are vinified together in stainless steel tanks at low temperature.
Tasting Notes
Bright, fairly pale, salmon-pink colour, with an exotic, mineral nose and notes of orange peel and angelica.
A fruity attack on the palate, then notes of toasted almonds and spice.
Food
It goes wonderfully with grilled fish and Provençal dishes such as bouillabaisse, anchoïade, ratatouille and stuffed vegetables.
