Vineyard
Terroir and aspect
This wine comes from the 3-hectare Clos, farmed under lutte raisonnée without herbicides. The east-facing vines are 70 years old. The shallow soil is a reddish earth mixed with limestone stones, with rock often at 30 cm.
Tasting Notes
Tasting
A wine with a powerful yet delicate nose of hawthorn and pear. The palate is round and generous with ripe fruit, resting on balance and purity. A very great wine for ageing, already a pleasure to drink.
Food and serving
A wonderful partner for the best moments of fine dining: shellfish, fish and Bresse poultry in cream. Serve at 14°C.
Winemaking
Winemaking and ageing
After hand harvesting, the grapes are pressed slowly. A light static settling, to keep as much material as possible, is done before fermentation, which is often very long. Fermentation happens thanks to the indigenous yeasts naturally present on the grapes. No additions apart from sulphites (used with care) disturb the birth of this wine.
