Vineyard
Terroir and aspect
This wine comes from a selection of a few rows of the Clos des Rocs, farmed under lutte raisonnée without herbicides. The east-facing vines are 70 years old. The shallow soil is a reddish earth mixed with limestone stones, with rock often at 30 cm.
Tasting Notes
Tasting
Very pure, golden in colour, with a nose of yellow fruit, almond and linden blossom woken by a touch of menthol. The opulent, generous palate develops brioche aromas. Creamy, it coats the palate and shows a perfect balance between roundness and acidity, then lengthens into fine bitter notes.
Food and serving
A wonderful partner for the best moments of fine dining: shellfish, fish and Bresse poultry in cream. Serve at 14°C.
Winemaking
Winemaking and ageing
After hand harvesting, the grapes are pressed slowly. Cold settling is done before fermentation and ageing in oak barrels (Minier cooperage). The wine is aged for 11 months and bottled at the end of August in the year after harvest.
