Winemaking
Wine-making process
Hand-picked grapes. Blanc de noir wine made from direct pressing black grapes and selecting the juice to only keep the clearest one. Fermentation interrupted by cooling the wine down. Drawing on residual sugars in May 2024.
Aged on lath for over 18 months. Disgorged on demand. No added sugars, unfiltered.
Tasting Notes
Red apple skin, wild strawberry and citrus zest on the nose, followed by almond, chalk and fresh bread. Bone dry with no dosage, the palate is intense and vibrant, carried by bright acidity and fine, energetic bubbles. Savoury depth and a chalky grip lead to a clean, saline finish.
