Winemaking
A confidential cuvée that respects the fruit
The finest bunches are carefully harvested and gently pressed in our pneumatic press, respecting the natural character of the fruit. The juice then goes into demi-muids to begin alcoholic fermentation with neutral yeasts.
For a full year, the wine rests quietly in these old oak casks on its lees, with regular stirring. The wine is then bottled and rests for a further year before it is released for sale.
Tasting Notes
An elegant wine
The result of this process is a wine of great elegance, a true reflection of this magnificent Sancerre estate. On tasting, the nose reveals a captivating, mineral complexity, echoing the vineyard's 100% flint terroir. Notes of elderflower hint at a promise that is fulfilled on the palate. The lively freshness of Granny Smith apple harmonises beautifully with a subtle touch of verbena, giving remarkable balance. On the finish, delicate bitter notes bring a pleasant length.
