Winemaking
Vinification
After pressing, the must (juice) is taken to a stainless steel tank for settling. This is natural settling by gravity (no added enzymes). It lasts between 12 and 24 hours. Then come the alcoholic fermentation and the malolactic fermentation, which are carried out in stainless steel tanks with temperature control.
Ageing
Ageing lasts 6 to 12 months.
Tasting Notes
With the green and yellow glints characteristic of this A.O.C., it is an abundant and generous wine. On the palate, rich, ample and persistent, its aroma and flavour develop fairly quickly. This wine is for drinking young. But keeping a few bottles for five or even ten years can hold astonishing surprises.
Food
White meat dish: calf's head with gribiche sauce. Fish dish: roast lobster. Cheese: Chaource.
