Winemaking
Vinification
After pressing, the must (juice) is taken to a stainless steel tank for settling*. It is a natural settling by gravity (no enzymes added). It lasts between 12 and 24 hours. Then come the alcoholic fermentation* and the malolactic fermentation*, which are carried out with temperature control. The élevage lasts 12 months.
Tasting Notes
Characteristics
With green and yellow glints characteristic of this A.O.C., it is an abundant and generous wine. Rich, ample, persistent, its aromas and flavour develop fairly quickly. This wine is therefore to be drunk young. The Chablis Vieilles Vignes has a superior structure, is more concentrated, with greater length than the Chablis.
