Winemaking
Vinification
After pressing, the must (juice) is taken to a stainless steel tank for settling. This is natural settling by gravity (no added enzymes). It lasts between 12 and 24 hours. Then come the alcoholic fermentation and the malolactic fermentation, which are carried out with temperature control.
Ageing
Ageing lasts 6 months in stainless steel tank with temperature regulation.
