Patrick Sullivan

2025 Patrick Sullivan Chardonnay

Patrick Sullivan, Gippsland, Victoria, Australia

Patrick Sullivan, a name synonymous with exceptional Australian chardonnay, is proud to present the 2025 release of his eponymous wine. Sourced from the Limestone Coast vineyards of Mount Gambier, Coonawarra and Wrattonbully, it celebrates the region's distinctive volcanic soils with a refined balance of richness, vibrant fruit and minerality. These sites, with shallow volcanic topsoil over limestone and basalt, lie within the world's third-largest volcanic plain, home to around 400 dormant cones. Having spent much of his childhood in this extraordinary landscape, Patrick has crafted a sophisticated chardonnay that reflects both the unique terroir and his winemaking heritage, culminating in an exceptional expression of the 2025 vintage.

Vineyard

Vintage notes

The 2025 season in the Limestone Coast set a positive tone early, with generous winter rainfall and a mild spring supporting even flowering and healthy vine growth. Cool, settled summer conditions allowed grapes to ripen slowly and evenly, preserving natural acidity and developing balanced flavors. Overall, the 2025 vintage delivers chardonnay with clarity, poise and texture, offering immediate appeal and excellent short-term ageing potential.

Winemaking

The fruit was whole cluster crushed, pressed and drained off into tank for settling. Primary fermentation took place in barrique and tank with approximately 25% new oak used.

Tasting Notes

Pale straw. Lime, lemon and grapefruit lead, with white peach, vanilla custard and lightly buttered toast. The palate is bright and precise, with zesty acidity and a mineral edge from limestone and volcanic soils, filled out by creamy richness and restrained oak. Balanced, fresh and long.
