Winemaking
Whole bunches pressed, then fermented 84% in stainless steel and 16% in two old French barrels, with a long ferment running into spring. Nine months on lees with full natural malolactic, no additions before racking, then 10 ppm sulphite at racking and again at bottling in February 2023. No fining or filtration.
Tasting Notes
Dried apple, pear and citrus peel on the nose, with a faint spice and a flinty edge. The palate is dry and textural, carrying more savoury depth and weight than most local Riesling, driven by taut, cutting acidity. A long, saline and precise finish.
