Winemaking
Fully destemmed, wild fermented with no additions, with one gentle wet cap or punch-down a day and wine returned over the cap by jug rather than pump. Twenty-three days on skins, then basket pressed. Twelve months in old French oak with no sulphite added, then racked and bottled with no fining or filtration.
Tasting Notes
Bright ruby. Dried strawberry, red cherry and raspberry aromas with green tea, bark and an earthy, mushroom edge. Medium bodied, with soft, very fine tannins giving shape and a savoury thread carrying the fruit to a long, gentle finish.
