White wines
The grapes are pressed as whole bunches in a pneumatic press. After settling for 24 to 48 hours in tank with no additions, the juice is put into barrel or tank. For fermentation, indigenous yeasts are mostly used.
Tasting Notes
Deep gold. Walnut, curry spice, dried apple and orange zest on the nose, with the classic tang from six years under a yeast veil. The palate is dry, intense and saline, with sherry like nuttiness, citrus and fine mineral notes cut by searing acidity. Very long and built to age for decades.
