Tasting Notes
Made without the flor veil, so the fruit speaks directly. Quince, ripe pear and lemon peel with a light spice note. The palate is dry, taut and textured, with Savagnin's bright acidity and a saline, stony core. Long and precise, finishing on citrus and spice.
Winemaking
Whole-bunch pressing in a pneumatic press. Settling for 24 to 48 hours in tank without additions, then the juice goes to barrel or tank. Mostly indigenous yeasts for fermentation.
