Winemaking
Sorted at the winery, then a three-day cold soak. Indigenous yeasts, 21 days on skins in all, with gravity pump-overs twice a day early on and a few foot punch-downs at the end. Press wine kept apart. Natural malolactic in barrel and 22 months' ageing in barrel. No filtration.
Tasting Notes
Fragrant crushed red cherry and violet on the nose, with a subtle gamey note. The palate is light and perfumed, with bright red fruit, a chalky texture and fresh acidity. Fine tannins and a savoury, mineral finish.
