Pneumatic pressing, juice selection and settling by gravity. Indigenous alcoholic fermentation and natural malolactic, then 12 months on lees in stainless steel. No fining, a light filtration, and pumping kept to a minimum.
Tasting Notes
Pale lemon. Citrus, white flowers and a flinty, struck stone edge on the nose. The palate is pure and fresh, with lemon and green apple fruit carried by bright acidity and a chalky texture. Lean, saline and focused, finishing clean and long.
Distributed in Australia by Principal Wine.
