Tasting Notes

The colour is deep, black. Ultima Terra 2023 shows an intense expression of fruit, and its bouquet releases scents of black fruit, blackcurrant jam and spice. The palate is marked by lovely harmony and tannins of exceptional finesse. Superbly complex, Ultima Terra 2023 will go a very long way! This vintage is a great wine of emotion.

Winemaking

The black grapes are harvested at full ripeness. Maceration is then carried out favouring gradual, slow extraction during fermentation, for 24 days. Then, after two rackings, the wine goes down to mature for 18 months in new 225-litre barrels. This ageing gives Ultima Terra a unique dimension, while keeping the expression of our terroir and our grape variety.

History

At Sauveroy there is an exceptional plot of vines whose subsoil is warm and where water is never in excess. With the 2003 heatwave, we decided to vinify this plot separately and create Ultima Terra. Since this terroir regularly gives astonishing ripeness, it was possible to age the wine in new barrels for at least 18 months. A risky bet in the first year, with an element of adventure... but the result went beyond our hopes: we managed to reproduce a secret used by the best, while keeping the expression of our terroir.
