Tasting Notes
Origine is the gateway to the world of white wines at Sauveroy. The maturity of the hand-harvested Chenin is perfectly controlled. On the palate, it reveals a beautiful aromatic complexity of white flowers and yellow fruits. This cuvée offers an elegant balance between freshness and generosity.
Winemaking
After hand-harvesting the finest grapes, fermentation takes place slowly at ambient temperature to enhance the ripe, terroir-driven aromas (thiols). A six-month ageing on fine lees in stainless steel tanks then brings out all the length and elegance of this magnificent floral, fresh, and fruity cuvée.
