Tasting Notes
This Savennières combines notes of ripe fruit such as pear and quince with a touch of honey and a fine salinity. On the palate it has broader shoulders, a magnificent mineral concentration and the patina of very fine ageing. The finish is long and precise. Throughout the tasting, it is of course the strength of the soil that leaves its mark on the wine. A fascinating Clos des 7 Quartiers!
Winemaking
The grapes are picked by hand at optimum ripeness in successive passes. Gentle whole-bunch pressing, then light settling in tank before alcoholic fermentation and ageing begin in small stoneware eggs (550 L). Ageing on fine lees lasts 12 months to gain complexity.
