Winemaking
Whole berries fermented with wild yeasts for three weeks under a heavy blanket of CO2. The juice is moved as little as possible to allow a partial carbonic ferment, giving tension, a faint hint of talc, natural colour and body.
Tasting Notes
Pale copper. The nose shows raspberry, lychee and ripe pineapple, with the faintest hint of talc. The palate is pure and detailed, with bright, juicy fruit, gentle spice and a lightly textured feel from the whole berry ferment. Playful yet serious, finishing fresh and fragrant.
