- Whole bunch pressed, wild fermented in Chassagne barriques, 12 months in barrel then 4 on lees in tank.

Winemaking
Hand picked, whole bunch pressed and wild fermented in Chassagne barriques. Aged 12 months in barrel, then four months on lees in tank. Frost kept the 2024 crop to 1.2 tonnes per acre.
Tasting Notes
Lime, grapefruit and mandarin peel with quince, flint and a little spice from oak. Deep and concentrated yet delicate, with creamy lees and a saline line to the finish. Serve it not too cold. Drink now to 2035.
