Picked with sugar in the mid 14s Baumé, destemmed and fermented in concrete with three weeks on skins. Frost kept 2024 yields tiny.
Tasting Notes
Dark cherry, plum and dark rose petal, with briar, fennel seed and earthy herbs. Firm, powerful tannins frame a fleshy core, so decant it now or give it several years. Drink to 2034.
