Dry-grown wines from two volcanic-soil vineyards in the Baw Baw Shire of West Gippsland.
Entropy farms two dry-grown vineyards on red volcanic soils in the Baw Baw Shire of West Gippsland. The Warragul vineyard, shared with William Downie and Patrick Sullivan, gives Riesling, Sauvignon Blanc Semillon and Cabernet Sauvignon.
Willow Grove was planted in 2001 on red volcanic and grey dermosol soils, on own roots and never irrigated. Savagnin, Pinot Gris and Pinot Noir come from there, farmed without systemic herbicides or pesticides.
Ryan Ponsford was a Melbourne photographic artist working with the wet-plate collodion process. He met William Downie in 2016, worked the 2017 vintage with him and founded Entropy in 2019.
Ryan farms almost six hectares on his own, and his brother designs the labels. In 2019 his family bought land in the Strzelecki foothills, planned for a high-density Pinot Noir and Chardonnay vineyard.
