Wilfred buys from family growers across McLaren Vale, and from the family's own certified organic and biodynamic vineyard in the Willunga foothills. The Monte comes from dark, rich soil over deep Tatachilla Limestone near the township, the Nero from Pirramimma Sandstone in the heart of the Vale.
Pirramimma Sandstone is a buff, fine-grained and poorly consolidated sandstone, laid down in a deep channel cut into older strata. The reds are wild fermented in open fermenters and matured in seasoned oak.
The name honours Walter William Wilfred Clappis, founder of the Walter Clappis Wine Co. His daughter Kimberly Cooter and her partner James Cooter make the wines.
They work for gentle extraction in the ferment, so the wines stay bright and juicy without losing structure. The range centres on Italian varieties, chosen because they perform so well in McLaren Vale.
